Easy Keto Meatballs
If you are not on the Ketogenic diet, you can still enjoy these meatballs with your favorite pasta or a side of mashed potatoes while your "Keto" friends join you for these tasty nuggets. They won't miss the carbs and neither of you will miss out on tasty meatballs!
INGREDIENTS
One pound #Edenpure ground beef
1/2 cup Almond Flour
One cup carrots shredded
One half cup shredded cheese
Two heaping tablespoons of lard or your preferred oil
(our favorite is #Ossabawlard!)
Three cloves of garlic, minced f inely
One half onion, finely chopped and sautéed.
Two eggs
2 tsp Italian seasoning
1/2 tsp Iberian Sea Salt
1/2 tsp Fresh Ground Black pepper
2 tsp sweet basil
2 tsp Garlic and herb blend

DIRECTIONS
Preheat oven to 350
Mix all ingredients thoroughly and divide into
1/4 cup portions. Shape into balls and place on a baking sheet or in muffin tin

Bake for 18 minutes, then remove from oven and drain any grease (there won't be much with our super-lean Eden Pure Beef!). Add a glaze of your favorite tomato sauce if desired and return to the oven for another 5 minutes.

Serve with your favorite pasta or side dish.
Mini Meatball option:
make meatballs 2 Tablespoons instead of 1/4 cup. Cook in mini muffin tins to help retain roundness. Serve with toothpicks as appetizers.
